Riccardo, a cheesemaker at Montecristo Dairy for over 30 years, will guide you step by step
in the creation of your 1st artisanal cheese
Our idea is to be able to give each of you an experience that will remain in your heart.
This is where our method comes from.
Cheese is made of few but quality ingredients.
Milk, rennet ferments and natural flavors such as truffle, lemon, arugula or raisins.
Here, these will be the only ingredients we will use.
The last secret ingredient? Love.
Once you learn the recipe during class, we will give you a small cookbook to take to
home with you.
You can use everyday utensils such as whips to recreate your cheese at home,
spoons and a common scale.

Montecristo Academy’s courses and experiences are based on years of experience as cheesemakers, years of studying and testing the recipes of the cheeses we make, and the great passion that drives us every day.
We have been producing more than 100 kinds of cheeses since 1994 and have trained generations of cheesemakers.
We love concreteness and practicality. Therefore, all our courses include the part
theoretical but especially the PRACTICAL part.
